摘　　要：对普通大米进行营养强化,不仅可补充其流失营养成分,还可增加大米本身缺乏一些营养物质;该文对强化矿物质、氨基酸、维生素等各种营养物质的大米研究进展加以综述。Enhancing the nutrition of ordinary rice can not only reinforce the lapsed nutrients,but also increase those it lacks of.This paper gives an account of the development of various fortified rices such as reinforcing minerals,amino acid,vitamins.
