摘  要:为探索胡萝卜复合肉制品中特征成分——类胡萝卜素的提取检测方法和性质,采用石油醚-丙酮溶剂从胡萝卜复合香肠和复合火腿(西式火腿)中提取了类胡萝卜素化合物,未经皂化处理直接进行紫外-可见光谱扫描可知,该提取物呈现典型的类胡萝卜素的吸收峰(三指峰),λmax在450nm,直接用分光光度法测定类胡萝卜素的含量是可行的。采用国标方法对胡萝卜复合香肠和复合火腿的类胡萝卜素(皂化后比色法测定)和蛋白质等成分进行了检测,并测定比较了胡萝卜复合火腿在冷藏(0~4℃)30d前后类胡萝卜素含量的变化。结果表明:胡萝卜复合香肠和复合火腿含有较高的类胡萝卜素和蛋白质,其中类胡萝卜素的保存率高。因此,胡萝卜复合肉制品中的类胡萝卜素可作为该类产品质量控制的重要指标,在生产过程中可采用非皂化的简易方法进行类胡萝卜素的提取、可见光谱定性分析和定量监测。In order to probe into the extracting and inspecting methods and properties of carotenoids in compound carrot meat products,the carotenoids was extracted from compound carrot sausages and hams(western-style ham) by petrotrum ether-acetone,and the carotenoids extracts was not saponated and directly inspectied the Uv-Vis absorption spectrum.The results showed that the spectrum of carotenoids extracts was typical "three-peak spectra",the λmax was about 450 nm,and determination the carotenoids contents by spectrophotometer was feasible.The carotenoids and protein contents of compound carrot sausages and hams were determinted by the state standard methods(the carotenoids determinted by spectrophotometer after saponification),and the carotenoids content change of compound carrot hams refrigerated at 0~4 ℃ after 30 d was determinted,the results showed that the compound carrot sausages and hams have a relatively high content of carotenoids and protein,and the preservation rate of carotenoids was high.The carotenoids in compound carrot meat products can be taken as an important quality control index,and the simple non-saponated method for carotenoids analysis can be use in the production of this meat products for the extration,visible spectrum qualitative analysis and quantitative supervision.
