摘  要:研究了吸湿剂和HOAP贮藏条件对金针菇保鲜效果的影响。通过测定金针菇贮藏过程中多酚氧化酶(PPO)活力、丙二醛(MDA)、水分损失率、游离氨基酸、还原糖含量等各种生理生化、感官指标的变化,正交实验设计优化金针菇HOAP的贮藏保鲜条件为:膨润土10%,活性炭8%,氧含量85%,装袋量75g(PE袋,20cm×30cm)。此条件下金针菇于1~3℃、相对湿度95%±2%贮藏35d,仍有较好的商品品质。The effect of high oxygen atmospheres packing(HOAP)conditions and hygroscopic agent on fresh-keeping of needle mushroom was studied.The physiological and biochemical indexes,such as activitie of polyphenol oxidase(PPO),malondialdehyde(MDA),moisture loss,free amino acids and reducing sugar were evaluated during mushroom fresh-keeping storage.Through orthogonal experiment design,the optimized conditions of HOAP mushroom fresh-keeping were bentonite 10%,activated carbon 8%,oxygen content 85%,needle mushroom 75g in a polyethylene bag(20cm×30cm).The mushroom stored for 35 days under the optimized condition at 1 ~ 3℃ and relative humidity 95%±2% still had a better commercial quality.
