摘  要:通过比较不同贮藏条件下甜樱桃外观品质、生理指标及贮藏环境气体的变化,研究了冰温塑料箱式气调贮藏对甜樱桃的保鲜效果,并初步探讨了其保鲜机理。结果表明,冰温塑料箱式气调贮藏能够在一定程度上减慢果实腐烂、果梗干枯及果肉褐变的速度;抑制果内丙二醛含量的增加及可溶性固形物、可滴定酸和还原糖含量的减少;其中以一老一新箱式气调处理效果最为显著,保鲜效果最好。The change of external quality, physiological index and environmental gas of sweet cherry at different storage con- ditions was compared. Preservation effect and mechanism of controlled freezing-point and modified atmosphere box preserva- tion on sweet cherry were preliminary studied. Results showed that controlled freezing-point and modified atmosphere box preservation could slow down fruit decay, stalk withering and flesh browning. It also inhibited the increase of MDA content and decrease of soluble solids content, titratable acidity and reducing sugar content. The sweet cherry was preserved better in the modified atmosphere boxes with one old and one new vent opening compared with other treatments.
