摘  要:采用物理筛分及酶解的方法分别从安徽、北京密云淀粉加工厂及实验室制备的甘薯渣中提取膳食纤维,并对其化学成分、物化及功能特性进行了研究。结果表明:3种不同来源薯渣提取的膳食纤维中,安徽的甘薯渣中总膳食纤维(TDF)和可溶性膳食纤维(SDF)含量最高,分别为85.32%、13.92%,明显地高于其他两种的含量。3种甘薯膳食纤维均显示有较高的持水性、吸水膨胀性和持油性。此外,安徽膳食纤维有较高的脂肪吸收、α-淀粉酶活性及胰脂肪酶活性抑制能力。因此,从大型甘薯淀粉加工废渣提取的膳食纤维具有较好的商业利用前景。In this study,the dietary fiber were extracted and purified from sweet potato starch residues of Anhui,Beijing Miyun and our laboratory by sieving and enzymolysis method,and its composition and physico-chemical properties were investigated.The results showed that the dietary fiber extracted from Anhui's residue had a highest total dietary fiber(TDF) and soluble dietary fiber(SDF) content compared to other two different residues,it was 85.32% and 13.92% respectively.All of the purified dietary fiber possessed a high water-holding capacity,oily-holding capacity and swelling capacity value.In addition,the dietary fiber of Anhui exhibited excellent fat absorption capacity,α-Amylase Inhibitory activity and pancreatic lipase inhibitory activity.It was,therefore,suggested that the dietary fiber which is extracted from residues of large-scale sweet potato starch factories should has the good prospects of commercial application.
