摘　　要：壳聚糖是一种用途十分广泛的具有生物活性的高分子化合物,可应用于水处理、医疗卫生、食品及保健等领域,具有广泛的应用和发展前景。对壳聚糖的功能性质及其在微胶囊技术中的应用进行分析和综述,为壳聚糖制品的进一步开发与应用提供了理论基础。Chitosan is a kind of polymer compounds with biological activity, and widely used in many fields,such as water disposing, medical treatment and sanitation, food, health care and health protection. It has wide application and development prospects.The function of chitosan and its application in microencapsulation were reviewed to provide,theoretical basis for the development and application of chitosan product.
