摘　　要：简叙了生产地面强化生麦曲对菌种,曲房,制曲工艺,操作要点,培养时间,温度控制,成品麦曲的要求,在此基础上对生产生麦曲,熟麦曲,强化生曲的优缺点进行比较和探讨。The needs for the production of ground-enhanced raw wheat Qu were briefly introduced, including microbial strains, Qu room, Qu-making technology, operating points, incubation time, temperature control and finished wheat Qu. Furthermore, the advantages and disadvantages of the production of raw wheat Qu, steamed wheat Qu and enhance raw Qu were compared and discussed.
