摘 要:目的:了解当前西式快餐连锁店所生产加工的食品卫生质量状况。方法:选择市卫生局所管辖的市内某一著名的跨国西式快餐集团辖下的8间连锁店,在2005年-2006年间抽检其生产加工的部分食品及其所使用的过滤水,并对其生产加工工艺、过程进行卫生学调查。结果:共抽取了薄饼、沙拉、油炸类食品、冷饮食品等4大类食品及过滤水共12种食品产品样品进行检验。结果,薄饼的理化指标中,过氧化值的合格率为96.88%。沙拉的细菌学指标达标率为47.9%,其中菌落总数达标率为95.8%、大肠菌群达标率为50%。油炸类食品的理化指标中,蔬菜类油炸食品的酸价合格率为90.63%,带馅的面粉类油炸食品的酸价合格率为93.75%,煎炸油的酸价合格率为90.6%。冷饮食品的细菌学指标中,配制的冷冻饮品细菌学指标达标率为75%,其中菌落总数的达标率为90.63%、大肠菌群的达标率为75%;桶装雪糕的大肠菌群合格率为81.25%;食用冰粒的细菌学指标合格率为62.5%,其中菌落总数合格率为75%、大肠菌群合格率为78.13%;现调机碳酸饮料的细菌学指标的合格率为84.38%,其中菌落总数合格率为90.63%,大肠菌群合格率为87.5%;过滤水的细菌学指标合格率为87.5%,其中细菌总数合格率为90.63%、总大肠菌群合格率为96.88%。结论:目前西式快餐店的食品卫生质量状况不容乐观,仍存在不少卫生问题,应引起卫生行政部门的充分重视。Objective:To study the food hygienic quality of a western fast food chain store in Guangzhou city.Methods: Food were sampled from 8 western fast food chain stores governed by one famous multinational western fast food corporation.Some food and some using filtered water were sampled and hygienic of the food production and processing was investigated during 2005-2006.Results: 4 categories of food such as thin pancake,salad,fried food,cold drinks and filtered water in total 12 kinds of food were tested.As a result,the physical and chemical index of thin pancake,the qualification rate of peroxide value was 96.88%.The qualification rate of bacteriological index of salad was 47.9%,in that,the qualification rate of total numbers of colony and coliform group was 95.8% and 50%,respectively.In the physical and chemical index of fried food,the qualification rate of acid value of the vegetables fried food,the flour fried food with filling,the frying oil was 90.63%,93.75% and 90.6%,respectively.The qualification rate of bacteriological index of cold drinks was 75%,in that,the qualification rate of total numbers of colony and coliform group was 90.63% and 75%,respectively.The qualification rate of coliform group of ice cream in bulk was 81.25%.The qualification rate of bacteriological index of edible ice was 62.5%,in that,the qualification rate of total numbers of colony and coliform group was 75% and 78.13%,respectively.The qualification rate of bacteriological index of carbonated soft drinks adjusted in the spot by machine was 84.38%,in that,the qualification rate of total numbers of colony and coliform group was 90.63% and 87.5%,respectively.And,the qualification rate of bacteriological index of filtered water was 87.5%,in that,the qualification rate of total numbers of colony and coliform group was 90.63% and 96.88%,respectively.Conclusion: The current food hygiene quality status of western fast food chain store is not optimistic.There are still quite a few sanitation problems.Health administration should pay great
