摘  要:探讨了经过物理场-酶法制备的六种豆渣水溶性膳食纤维(SDF)对乳酸菌的增殖作用,以及在生理条件下(37℃,pH=2、pH=7)对重金属离子Pb2+、Hg2+、Cd2+的吸附作用。实验结果表明,在培养基中添加六种水溶性膳食纤维对保加利亚乳杆菌和乳酸片球菌都具有一定的促进增殖作用。对保加利亚乳杆菌的促进增殖作用更显著,主要体现在提高最大生长量和延长稳定期,延缓衰老期;水溶性膳食纤维对重金属离子的吸附能力在模拟小肠环境下远远好于模拟胃环境,在两种酸度条件下,对Pb2+、Cd2+的吸附效果较好,对Hg2+的吸附效果较差。The soluble dietary fibers made by physical field combined enzymic method were used to study their multiplication effect on Lactobacillus and their adsorption capacity of such heavy metal ions as Pb2+ , Hg2+ , Cd2+ under the physiological conditions(37℃, pH = 2 and pH = 7).The results showed that the addition of soluble dietary fibers to the culture medium could multiply the lactobacillus.The multiplication effect on Lactobacillus bulgaricus was more pronounced than Pediococcus acidilactici Lindner, which appeared increasing the maximum growth of stationary phase and prolonging the stationary phase.The adsorption capacity of soluble dietary fiber under the small intestine environment was far stronger than the gastric environment. Under two acidity conditions, the adsorption capacity of soluble dietary fiber for Pb2+ and Cd2+ was stronger than Hg2+.
