摘 要:为研究杏仁蛋白对血脂的影响,先用盐析法从山杏仁中提取杏仁蛋白,并用胰蛋白酶水解部分杏仁蛋白,然后采用大鼠脂代谢紊乱模型进行动物实验。选用初体重100g左右的Wistar大鼠在实验环境下适应4d后,以体重无差异分成3组(每组6只):对照组、蛋白组和水解组。每组在试验期间自由摄入高脂饲料,经口定量(300mg/kg.d,每只大鼠)给予水或杏仁蛋白、杏仁蛋白水解物10d,然后禁食16h,心脏取血,测定血清总胆固醇、甘油三酯、高密度脂蛋白胆固醇、低密度脂蛋白胆固醇水平。结果表明,杏仁蛋白具有显著降低血脂作用,杏仁蛋白水解产物的降血脂的作用更明显一些。To investigate the effect of almond protein on serum lipid,almond protein was extracted from apricots kernel by salting out method and part of almond protein was hydrolyzed with trypsin,then,animal experiments were carried out using the rat lipid metabolic disorder model.After acclimation to the laboratory surroundings for 4 days,rats weighing about 100 g were divided into 3 groups of 6 rats each on the basis of body weight(control,protein and hydrolysate group).Each group had free access to the high-lipid diet during the experimental period.Almond protein,almond protein hydrolysate or water was inoculated orally as 300mg/kg·d per mouse for 10 days.After fasting for 16 h,blood was collected by cardiac puncture.Serum total cholesterol serum triglyceride,serum high-density lipoprotein cholesterol and serum low-density lipoprotein cholesterol were determined.Results indicated that almond protein could decrease serum lipid level significantly and almond protein hydrolysate showed more effective.
