食品中偏酒石酸的高效液相色谱法检测研究

摘　　要：主要探讨应用高效液相色谱法检测葡萄酒、葡萄罐头、汽水等食品中的偏酒石酸。以RezexROA-Organic Acid色谱柱为分析柱,确立了食品中偏酒石酸的高效液相色谱检测法。通过试验,考察了9种常见有机酸对食品中偏酒石酸检测的影响,结果显示,在试验条件下,9种有机酸不会对偏酒石酸的检测造成影响。对方法的回收率和精密度作了分析探讨,结果在所确定的实验条件下,峰面积和标准溶液在0.1～20mg/mL范围内呈良好线性关系,线性系数大于0.999,回收率处于90.0%～100.0%,变异系数均小于5.0%。The High Performance Liquid Chromatographic（HPLC）method was employed for determining the metatartaric acid in wine,canned grape,soft drink and so on,with Rezex ROA-Organic Acid of column.Then the effect of the nine organic acid was studied by testing,and the result proved that the nine kinds of organic acids did not affect the partial detection of metatartaric acid.The peak area and the standard solution in the 0.1～20mg/mL keep a good linear relationship,with a correlation coefficient of more than 0.999.The extraction recoveries were between 94.5%～100.0% and the RSD less than 5.0%.
