摘  要:以OHAA(环氧乙烷高级脂肪醇,Oxyethyene higher aliphatic alcohol,OHAA)为保鲜材料,在温度为(0±1)℃、相对湿度为80%~90%的贮藏条件下,研究不同浓度的OHAA(0.5%、1.0%、1.5%)对圆脆鲜枣的贮藏保鲜效果。实验结果发现:在56d时,以浓度为1.0%的OHAA涂膜处理效果较好,其果实腐烂率最低,为19.67%;果实贮运性能好,硬度为10.7kg/cm2;果实营养成分损失较少,其果实VC含量为2.28mg/g;果实内部生理环境状态良好,多酚氧化酶(Polyphenol Oxidase,PPO)活性相对较低。而空白对照处理圆脆鲜枣果实腐烂率高达66.67%,营养成分损失严重,VC含量仅有2.2mg/g。说明1.0%的OHAA涂膜保鲜处理圆脆鲜枣可延缓果实衰老,明显延长其贮藏期。Using OHAA (Oxyethyene higher aliphatic alcohol)as the fresh-keeping material, the influence of different conditions on the preservation of fresh Yuancui jujube storage was studied such as the concentration of OHAA(0.5%, 1.0%, 1.5% ), temperature (0±1)℃ and relative humidity ( 80%- 90% ). The experimental results showed that during about 56 days' test of storage, the effect of the t.0% OHAA coating was the most distinguished.The decay rate of the fruit was the lowest,which was 19.67%.The capacity of fruit storage was better and its hardness was 10.7kg/cm2 .The loss of nutrition was comparatively low, in which the content of Vc was 2.28mg/g.The inner growing environment of the fruit was moderate and the activity of PPO(polyphenol oxidase) was comparatively low. In comparison, the decay rate of the fruit in the selected control group had reached 66.62%, in which the loss of the nutrition was serious,the content of Vc was only 2.2mg/g.Such result indicated that using 1.0% OHAA in coating preservation can obviously delay the caducity of fresh Yuancui jujube and can effectively prolong its storage period.
