摘  要:目的:研究多孔隙牡蛎贝壳粉的生物功效。方法:采用高温煅烧制备多孔隙牡蛎贝壳粉,以柱层析除菌试验检测其除菌能力;以固相微萃取(SPME)技术结合GC-MS联机分析,检测贝壳粉对鱼肉中挥发性成分的影响。结果:用120目多孔隙牡蛎贝壳粉填直径为1.2cm的柱子,柱高为1cm时抑菌率可达82.3%,饱和时间50min时具有较强的除菌能力。脱臭前、后气味成分中烷烃类化合物峰面积减少率在80%以上。处理后3种海鱼鱼肉(小黄鱼、鲳鱼和带鱼)的挥发性物质中,二甲基甲胺的峰面积减少率分别为79.27%、100%和99.01%。结论:多孔隙牡蛎贝壳粉具有较强的除菌和脱臭能力,是一种有价值的生物过滤、除臭材料。Objective:To evaluate the biological functionalities of honeycombed oyster shell powder.Method:The bacteriostatic capacity of calcined oyster shell powder was detected by column filtration method,and effect of oyster shell powder on the volatile compositions of fish muscle were determined by solid phase microextraction(SP-ME) and gas chromatography-mass spectrometry(GC-MS).Result:Using 120 mesh honeycombed column with 1.2 cm diameter and 1 cm high could reach to 82.3% bacteriostatic rate and the saturation times was 50 min.Treated fish muscle with oyster shell powder decreased the peaks area of the alkane compounds over 80%.The peak area of dimethylformamide in the three kinds of marine fish(little yellow croaker,pomfret and trichiurus haumela) was decreased 79.27%,100% and 99.01%,respectively.Conclusion:The honeycombed oyster shell powder showed perfect bacteriostatic and deodorization capacilies.It is a valuable biological filtration and deodorization material.
