摘 要:测定了常见无机金属离子盐对荸荠皮提取物中黄酮含量的影响,用TBA法研究了无机金属离子盐对荸荠皮提取物抗氧化能力的影响,并测定了无机金属离子盐对荸荠皮提取物总还原力的影响。结果表明:常见无机金属离子盐对荸荠皮提取物中黄酮含量影响不显著,黄酮含量降低率范围为:-0.25%~-10.64%;各处理丙二醛生成量均低于只添加荸荠皮提取物的对照(除亚硝酸钠外),丙二醛的降低率范围为:-3.73%~-71.43%,表明这些无机金属离子盐对荸荠皮提取物的抗氧化能力有增效作用;添加常见无机金属离子盐(除亚硝酸钠外)可不同程度提高荸荠皮提取物的还原力,还原力变化率范围为3%~118%。The infuence of common inorganic metal ions on flavonoids content of extract from Eleocharis tuberosa peel was determined. The influence of inorganic metal ions on antioxidant capacity of extract ofEleocharis tuberosa peel was studied by TBA method. In addition, the effect ofinorgallic metal ions on reducing ability of extract was determined. The results showed that the influence of common inorganic metal ions on flavonoids content of extract was not significant, and the reduction range of flavonoids content was from -0.25% to -10.64%. Malondialdehyde (MDA) content was lower than that of control (except NaNO2). The reduction range of MDA content was from -3.73% to -71.43%. The results suggested that these inorganic metal ions had a synergistic effect on antioxidative activity of extract of Eleocharis tuberosa peel. The addition of inorganic metal ions alone (except NaNOz) could increase the reducing ability of extract, and the reducing ability ranged form 3% to 118%.
