摘　　要：介绍了牛奶的营养成分及价值,综述了牛奶贮藏保鲜技术的研究进展,并结合实际情况对其主要发展方向进行了展望。The nutritional composition and value of milk was described, and the progress in research on the skills for storing it and keeping it fresh was reviewed. Furthermore, the further development of the skills was prospected in combination with the actual situations.
