摘　　要：高职教育的本质在于职业技能培养,实训教学作为酒店管理专业教学的重点和难点,在整个人才培养过程中举足轻重,但实际的实训教学管理还存在诸多需要改进和提高的地方。坚持校企合作、工学结合,以"就业为导向,素质为核心,能力为基础"的人才培养模式,是职业教育的核心所在。在校企合作人才培养模式的基础上,科学合理的对实训教学管理进行创新和突破,是酒店管理专业教学的重要发展方向之一。The nature of vocational education is vocational skills training, training teaching as the key and difficult points of the hotel management teaching is pivotal in the process of the entire personnel training, but, in fact, there are still many parts that need, to be improved and enhanced for actual practical teaching management. Adhering to the training mode of school-enterprise cooperation, work and study, ＂Employmentoriented, quality core, competency-based, is the core of vocational education. On the basis of school-enterprise cooperation in personnel training mode, a scientific and rational management of training teaching innovations and breakthroughs, is one of the important development direction of the hotel management teaching.
