摘　　要：On the subject of Dongxiang taste, one the mutton dish Dongxiang shouzhua, which the ethnic cuisine. cannot omit is typical of shouzhua （meaning ＂eat with the hands＂） is a time-honored dish of northwest China. It is not only representative of the local people＇s superb cooking skills, but has become one of their most important sources of income. Being good at cooking mutton has brought the local people handsome profits.
