摘 要:检验电子舌对啤酒的区分辨识能力。采用电子舌对市售的10种啤酒进行检测,所得数据进行主成分分析后,着重研究不同啤酒的苦味、苦味回味、酸味。结果表明,主成分PC1和主成分PC2对10种啤酒有很好的区分,且对原始数据的信息保留量达到了98%;样品中苦味和苦味回味最重的是1号样品,7号次之,酸味最重的是10号样品,9号次之,与实际情况相符。该电子舌能很好的区分这10种啤酒,在啤酒品牌区分、真伪辨识中有巨大的应用潜力。Electronic tongue was used to distinguish different kinds of beer in the experiments. It was applicated on 10 kinds of commercially available beer to detect their flavor,based on the data obtained by principal component analysis(PCA), especially focusing on the bitterness, aftertaste-B and sourness. The results showed that PC1 and PC2 had a good effect to distinguish the 10 kinds of beer, and the information retained quantity of original data had reached the level of 98 % ; In addition, sample 1 had the heaviest bitter and aftertaste-B while the sample 7 was second, and sample 10 had the heaviest sourness while sample 9 was second, The conclusion was in line with the actual situation. Electronic tongue can effectively distinguishing different kinds of beer ,it could be widely used in beer brand seperation and authenticity identification.
