摘  要:以玉米为原料,通过固态发酵筛选高产Monacolin K红曲菌株,并对菌株的液态培养基组成及培养条件进行研究。从实验室保存的5株红曲霉菌株中筛选出1株Monacolin K总产量为0.903g/kg的红曲霉M-A11。以红曲霉的生长量为指标,通过单因素试验确定最佳的液体培养基组成为玉米粉3%,豆粕粉1%,MgSO40.1%,K2HPO40.15%,NaNO30.1%,最佳的培养条件为装液量为50mL/250mL,pH值为5.5,培养温度为30℃,摇瓶转速为170r/min,最佳培养时间为84h。Using corn as raw material, the strain with high producing capacity of Monacolin K was screened by solid-state fermentation and the com- position of the liquid medium and conditions were studied. The strain of Monascus anka M-A11 with Monacolin K production of 0.903g/kg was screened from five strains stored in laboratory. Using the amount of growth as index, the optimal medium of corn powder 3%, Soybean meal powder 1%. MgSO4 0.1%, K2HPO4 0.15%, and NaNO3 0.1%, and the optimal condition of medium volume 50ml/250ml, pH value 5.5, culture temperature 30~C, shake flasks speed 170r/min, incubation time 84h were determined by the single factor experiment.
