摘　　要：简介了海南菜的历史,介绍了三亚十大名菜的配料和制作方法,对十大名菜的营养价值进行了分析研究,说明了研究三亚地方菜的重要意义。This paper is a brief introduction to the history of Hainan dishes, including analysis about the in- gredients, cooking methods, nutritional value of 10 famous Sanya dishes, which illustrates the meaning and value of Hainan local dishes.
