摘　　要：近年来随着益生菌越来越受到人们的青睐,应用于其中的包埋技术微胶囊也在迅猛发展,壁材作为其中的重要组成部分同样引起人们的关注。在介绍益生菌微胶囊化的基础上,深入论述了应用于益生菌微胶囊化生产中壁材的分类和性质。Nowadays, more and more attentions have been focused on the usage of probiotics. The microencapsulation technology applied to probiotics develops quickly as well. As an important composition, wall-material of microencapsulation also obtained more and more interests. Based on the introduction of probiotics and its microencapsulation technology, the classification and their properties of the wall-material used in microencapsulation were discussed deeply.
