中高温大曲中的挥发性成分分析

摘　　要：采用索氏提取法对浓香型中高温大曲中的挥发性成分进行提取,并应用气质联用技术对提取物进行定性分析研究。结果表明,从大曲中共检测出主要成分39种,其中含氮化合物8种、醇类化合物7种、有机酸类化合物10种、酚类化合物4种、酯类化合物2种、含氧杂环类化合物3种、烷烃类化合物2种、芳香族化合物1种、酮类化合物2种。其中,四甲基吡嗪、愈创木酚、4-乙烯基愈创木酚和苯乙醇对大曲的香气有重要贡献。Volatile compounds in medium/high-temperature Daqu were extracted by Soxhlet extraction method and then analyzed by GC-MS. There were 39 volatile compounds in total detected including 8 nitrogen compounds, 7 alcohol compounds, 10 organic acid compounds, 4 phenols compounds, 2 ester compounds, 3 heterocyclic compounds, 2 alkanes compound, 1 aromatic compound, and 2 ketone compounds. Among them, tetramethylpyrazine, guaiacol, 4-vinyl guaiacol and phenylethanol had important contributions to Daqu aroma.
