摘 要:非对称富马酸酯类具有良好的抑菌活性。以顺丁烯二酸酐和单硬脂酸甘油酯为起始原料,分3步合成1-硬脂酸-3-富马酸单甲酯-甘油二酯,鉴定并研究了其抗菌活性。实验表明,1-硬脂酸-3-富马酸单甲酯-甘油二酯(SFDG)具有很好的抑菌作用,可延长大肠杆菌和牛奶酸败混合菌的适应期,抑菌效果与苯甲酸钠接近。Asymmetric fumaric acid esters had good antibacterial activity. The 1-stearic acid-3-monomethyl fumarate-diglycerides(SFDG) was synthesized with maleic anhydride and stearic acid monoglyceride as starting material.The product was identified and studied the antibacterial activity.The results showed that l-stearic acid 3-monomethyl fumarate diacylglycerol had a good antibacterial activity.It could extend the adaptation period of mixed strains of Ecofi and milk rancidity and the antibacterial activity was closed to that of sodium benzoate.
