摘  要:γ- 谷维素是一种重要营养物质,尤其在米糠油中,其含量占1%~2%,是一种天然抗氧化剂。由于组成复杂,至今未能逐一检测出其所合成分。对目前国内外常用分析检测米糠油中γ- 谷维素的方法进行了分析比较,紫外分光光度法用于粗略测定γ- 谷维素含量,高效液相色谱法作为先进手段测定结果较为准确,液质联用、气质联用技术能精确分离检测γ- 谷维素所含阿魏酸酯成分,有助于γ- 谷维素生理活性的进一步研究。γ- oryzanol is an important nutrient, and the content of T -oryzanol in rice bran oil is 1% 2%, which is a natural antioxidant. Since the composition of γ- oryzanol is complex, its ingredients have not been detected one by one. The current common analysis and detection techniques of γ- oryzanol in rice bran oil at home and abroad were compared. UV spectrophotometer was used for the rough determina- tion of γ- oryzanol content, high performance liquid chromatography as an advanced means had accurate determination results, and LC - MS and GC - MS could accurately separate and detect the composition of ferulic acids, which contributed to the further study of physiological activities of γ- oryzanol.
