发酵乳中嗜热链球菌产乙醛和双乙酰的动态变化研究

摘　　要：以发酵特性较好的6株嗜热链球菌为研究对象,对其在发酵乳后熟期间产乙醛、双乙酰的能力及其产量累积动态变化规律进行研究,建立6株嗜热链球菌风味物质累积动态模型,结果表明表征乙醛、双乙酰质量分数信息的数据空间均呈现随时间的动态连续变化过程,在实测数据的基础上,拟合出产量累积曲线,得出发酵乳中嗜热链球菌产乙醛、双乙酰的累积过程均符合多项式函数,其拟合曲线拟合方程为一元三次方程,为嗜热链球菌的筛选提供依据。This study was to study the dynamics of acetaldehyde and diacetyl production in fermented milk by six Streptococcus thermophilus strains . The results obtained in this study developed foundations for screening of S. thermophilus used in fermented milk industry. The results showed that the data space of acetaldehyde and diacetyl content information presented a dynamic process with time. On the basis of the mea- sured data, we fitted out the cumulative yield curves, and revealed the accumulated process of acetaldehyde and diacetyl content fit with the polynomial function in mathematics.
