摘 要:以新鲜金枪鱼片为研究对象,通过测定并对比PE保鲜膜托盘包装(PE)、真空包装(VP)、气调包装(MAP,100%CO2)和壳聚糖涂膜包装(CF)4种保鲜处理金枪鱼片在-1℃冰温贮藏过程中生物胺、三甲胺(TMA)和总菌落数的变化,筛选最适合的冰温贮藏金枪鱼片的保鲜包装方法。研究结果表明,冰温贮藏过程中所有方法处理样品的总生物胺含量、三甲胺含量和菌落总数均逐渐上升;保鲜处理对腐胺、色胺和苯乙胺的抑制作用无明显差异,精胺和亚精胺仅在贮藏前期被检出。CF处理对金枪鱼片生物胺的抑制效果最佳,尸胺被完全抑制,组胺质量分数小于50 mg/kg。在抑制菌和三甲胺方面,CF处理也比MAP、PE和VP的效果好。4种包装处理对冰温贮藏金枪鱼片中总生物胺的产生和微生物滋生的抑制作用顺序为PE<VP<MAP<CF。The objective of this study aims to compare the effects of polyethylene film packaging(PF), vacuum packaging(VP), modified atmosphere packaging(MAP: 100% CO2) and chitosan film packaging(CF) on the formation of biogenic amines and trimethylamine(TMA) during the storage of Yellowfin tuna(Thunnus albacares) fillets under controlled freezing-point temperature. The result show that the biogenic amine content, trimethylamine content and aerobic bacterial count generally increase in all treatments as the storage progressed. Obvious differences were found(P0.05) in the levels of cadaverine, tyramine and histamine among the four treatments, while it is not detected profound difference in putrescine, phenylethylamine and tryptamine contents. Especially, CF packaging method significantly inhibits histamine and cadaverine formation in tuna fillets under controlled freezing-point temperature. Spermidine and spermine are detected only at the beginning of the storage period for experimental conditions. Compared to PE, VP and MAP, CF has the best effect on suppressing the formation of trimethylamine and the aerobic bacterial count. The amine contents and the amount of aerobic bacterial count of Yellowfin tuna(Thunnus albacares) fillets are highest in stored in PF, followed by VP,MAP and CF packaging methods.
