摘 要:通过模拟储藏,研究了臭氧处理高水分稻谷在常温储藏过程中理化和微生物指标的变化规律及保鲜期。结果表明:臭氧处理对高水分稻谷发芽率没有影响;在臭氧处理浓度高时,脂肪酸值略有增加;微生物量降低明显。臭氧处理后的高水分稻谷在常温储藏过程中发芽率呈基本一致的下降趋势;脂肪酸值增加,高浓度时尤为明显;细菌量和霉菌量基本呈现储藏开始10d后上升,随后下降。臭氧处理可延长高水分稻谷的保鲜期,考虑到臭氧处理浓度对稻谷品质的影响和成本,臭氧处理浓度选择以55mL/m3为宜。The analysis of physicochemical and microbial index during the storage of high--moisture paddy with ozone treatment was investigated by simulated storage. The results showed that the germination rate was no influence, fatty acid value increased slightly as high ozone concentration and microbial biomass reduced markedly when high--moisture paddy was treated by ozone. The germination rate had the downward trend basically, the fatty acid value increased as high ozone concentration and the mount of bacteria and mold raised first 10 days and decreased then during the storage of high--moisture paddy by ozone treatment. The shelf life of high--moisture paddy with ozone treatment can prolong with controls. Considering the in- fluence of concentration of ozone treatment on the quality of paddy and cost, 55 mL/ms ozone treatment concentration was used.
