摘  要:目的了解河南省熟猪肉制品中亚硝酸盐的含量。方法 2012年从全省18个地市随机采集16种1 368份熟猪肉样品,用国标法GB/T5009.33分析熟猪肉制品中亚硝酸盐的含量。结果熟猪肉制品中亚硝酸盐的平均含量为82.75 mg/kg;依据《食品添加剂使用标准》GB2760判定,亚硝酸盐超标的熟猪肉制品为409份,总超标率为29.90%,其中猪肚的亚硝酸盐超标率最高为71.43%,其后依次为猪大肠58.33%、猪皮57.89%、猪心42.11%、猪头肉37.24%;城市熟猪肉制品中亚硝酸盐的超标率为35.40%,高于农村熟肉制品中亚硝酸盐的超标率26.73%;以路边摊位等环节采集到的熟猪肉制品中亚硝酸盐的超标率最高为44.16%;2012年熟猪肉制品中亚硝酸盐的超标率与2010年基本持平。结论河南省熟猪肉制品中亚硝酸盐含量超标情况比较严重,监管部门应针对相关环节加强对食品安全的监督管理,保护广大消费者的食品安全。Objective The study aimed to assess the nitrite content in pork products in Henan Province. Methods 1368 samples from 16 types of pork products were randomly selected from 18 cities in Henan in 2012, and nitrite contents in the products were analyzed according to GB/T5009.33. Results The average nitrite content in the pork products was 82.75 mg/kg. According to the Standards for Food Additives in GB2760, 409 samples(29.90%) had excess nitrite; among those, pig stomachs had the highest excess of nitrate(71.43%), followed pig large intestine(58.33%), pig skin(57.89%), pig heart(42.11%), and pig head(37.24%).Excess nitrite in pork products was more common in urban areas(35.40%) than in rural areas(26.73%). The highest excess of nitrite was found in pork products sold at streetside stands(44.16%). The prevalence of excess nitrite in pork products in 2012 remained unchanged as compared with that in 2010. Conclusion The results indicated that excess nitrite in pork products is relatively common in Henan Province. Relevant supervising agencies shall enhance the supervision and management of food safety issues at specific links, so as to ensure the food safety for the mass consumers.
