摘  要:对上海豆制品行业豆制品用煎炸用油品质进行了调研,共调研了8家企业,并对其中4家企业进行了煎炸油取样检测。调研结果表明,上海豆制品企业原料油基本由市场知名品牌供应商提供,质量有保证。在加工过程中,企业对煎炸油采取了多种净化措施,能在一定程度上保证煎炸油品质。从油样检测结果来看,市场销量大的油炸豆制品煎炸油总体状况良好,但是需要高温油炸和销量较小品种上还存在一些问题,油样的不合格率较高。The quality of deep-flying oils from 8 beans producers in Shanghai were researched. The samples from 4 producers were collected to be investigated. Research results showed that most of the raw material oil provided by well-known brands suppliers in Shanghai bean products companies had quality assurance. From the detection results of deep-frying oil sample, the overall condition of deep-frying oils was good from high consumption in flied bean products. But there were some problems in the high temperature flying products and less consumption products, and the deep-flying oils sample unqualified rate was higher.
