摘 要:通过活菌计数、还原糖和蛋白浓度测定、抗氧化性、感官评价等试验方法探讨了益生微生物在健胃消食片药渣开发中的可行性。结果表明,益生微生物在未经处理的药渣中存活率高达1010CFU/m L,降解率约为25%~30%,其还原糖和蛋白质总量分别为2.91 mg/m L和553μg/m L,显著高于空白组,且产生良好的药香和乳酸味。抗氧化性指标表明,发酵液与原始药渣相比,其1,1-Diphenyl-2-picrylhydrazyl radical(DPPH)、O2·-和HO·自由基的清除能力、Fe2+螯合能力和还原活性均得到提高,其中DPPH的清除能力最为明显,高达80%。研究将健胃消食片药渣原有的药用成分和益生菌有机结合,进行药渣的二次创收,为我国中草药药渣的回收利用提供理论基础和应用依据。This study explores the feasibility of utilization of probiotic microorganisms in the residues from the development of Jianweixiaoshi tablets using viable cell counting,reducing sugar determination and protein de-termination,oxidation resistance evoluation and sensory evaluation.The results showed that the survival rate of probiotic microorganisms could reached 1010 CFU/mL and degraded 25%-30%of the residuce,and the total a-mount of reducing sugars and proteins received a significantly increase to 2.91 mg/mL and 553μg/mL,and pro-duced sensational herbal smell and lactic acid flavor.Antioxidant activity test indicated that the 1,1-Diphenyl-2-picrylhydrazyl radical(DPPH),O2? -and HO? radical scavenging ability,Fe2+chelating ability and reducing activity were enhanced compared with the control group,of which the DPPH clearance ratio was as high as 80%. This study combines the medicinal ingredients in Jianweixiaoshi residues and probiotics,which creates secondary income of the residues,and provides the theoretical basis and application basis for the recycling of the Chinese herbal medicine residues.
