摘 要:以β-胡萝卜素油悬液的含量和过氧化值为指标,研究了β-胡萝卜素油悬液分装在不同材料的瓶中,其含量和过氧化值随储存温度、储存时间和光照条件变化的规律。结果表明:随着储存温度的升高,β-胡萝卜素油悬液的含量逐渐下降、过氧化值逐渐升高;随着储存时间的延长β-胡萝卜素油悬液的含量呈下降趋势、过氧化值呈上升趋势;与光照条件下相比较,在避光条件下,β-胡萝卜素油悬液的含量和过氧化值稳定性好;3种瓶装材料中,铝瓶的储存效果最好,塑料瓶次之,玻璃瓶最差,因此,在β-胡萝卜素油悬液的生产销售和使用过程中,应采用低温、避光、铝瓶包装,避免含量下降和氧化酸败。Content and peroxide value of β-carotene oil suspension which was packed in different bottles were studied with variation of storage temperature,storage time and light. The results showed that: with storage temperature increasing,the content of β-carotene oil suspension decreased and the POV of β-carotene oil suspension increased;With storage time prolonging,the content of β-carotene oil suspension decreased and POV of β-carotene oil suspension increased;On avoiding light,the content and POV of β-carotene oil suspension were stable. Aluminum bottle was the best in three containers,and glass bottle was the worst. It was best to select low temperature,avoid light and Aluminum bottle during the process of production,sale and storage.
