摘  要:以枣渣为原料,研究了水浴、超声、微波提取方法对黄酮抗氧化活性及得率的影响,优化了微波提取的工艺过程。结果表明:提取方法对枣渣黄酮的抗氧化活性和得率有不同程度的影响,不同的提取方法对枣渣黄酮的抗氧化活性影响整体呈现显著性差异,水浴提取和超声提取对黄酮的得率呈现显著性差异,微波提取的黄酮得率比超声提取的黄酮得率高,但2者并未呈现显著性差异。微波的最佳提取工艺为:m(料)∶v(液)=1 g∶38m L,微波功率300 W,提取时间98 s,黄酮得率为1.76%,清除ABTS自由基的活性为66.09%。The flavonoid from jujube residue by different methods was studied. The optimum extracting process was put forward,and antioxidant activity property of the extract from the jujube residue was studied. The antioxidant activity and withdrawing conditions of flavonoid by using water bath and ultrasonication and microwave were campared; Microwave extraction process was optimized. The results showed that the extraction method had significant difference on the antioxidant activity. Water bath and ultrasonication had significant influence on the yield of jujube residue flavonoid. Microwave extraction of flavonoid yield was higher than ultrasonic extraction of flavonoid yield. But they had no significant difference. The optimum extraction conditions were as follows: ratio of material to liquid 1∶ 38( g∶ m L),microwave power 300 w,microwave time 98 s,flavonoid yield 1. 760 %,scavenging effects on ABTS+·66.09 %.
