摘 要:了解南海地区水产品的甲醛本底值,为水产品中甲醛的监管提供科学有效的综合判断方法。随机抽取海捕鱼类、甲壳类、软体动物等共42个品种,240个样品;养殖鱼类、虾及加工制品共19个品种,96个样品。分别依据SN/T1547-2011《进出口食品中甲醛的测定液相色谱法》,采用高效液相方法测定。海捕鱼类中长蛇鲻、细蛇鲻、龙头鱼天然甲醛含量很高,平均值分别为64.76、71.50、180.96 mg/kg;除此之外,绝大多数海捕鱼类都天然含有甲醛,平均含量8.17 mg/kg。养殖水产品中绝大多数含有天然甲醛,平均含量1.10 mg/kg。养殖水产的加工制品以及牛蛙腿一般含有天然甲醛,平均含量0.40 mg/kg。海捕水产与养殖水产及其制品天然甲醛含量有差异,不同品种的海捕鱼中天然甲醛含量的差别很大,水产品中检出的甲醛是否是人为添加需要根据检出值、甲醛本底含量数据、检出水产品的保存状态等进行综合判断。To understand the bottom value of formaldehyde in marine products,and offer the comprehensive judgment of formaldehyde regulation of the marine products.42 species of sea water fish,crustacean and mollusk,etc,a total of 240 samples,were collected.Farmed fish,prawn and processed a total of 19 species,96 samples were collected.High performance liquid chromatography was used to analyze formaldehyde content according to 《Determination of formaldehyde in food for import and export》(SN/T 1547-2011).The results showed that the most of sea water fish contained formaldehyde,but the content of which was low,apart from Saurida elongata,Saurida gracilis and Bombay duck.The average content of formaldehyde in the most of sea water fish was 8.17 mg/kg.The average natural contents of formaldehyde in Saurida elongata,Saurida gracilis and Bombay duck are 64.76,71.50,180.96 mg/kg.The average content of formaldehyde in most of farmed aquatic products contain formaldehyde was 1.10 mg/kg.the processing products of Farmed aquatic products and Bullfrog leg contain formaldehyde,the average content of formaldehyde in which was 0.4mg/kg.The natural content of formaldehyde had the difference between sea aquatic products,Farmed aquatic products and processing products.content difference was remarkable between differet sample sea water fish.It was judged whether the formaldehyde detected from the aquatic products was added artificially or not based on the content value detected,the bottom content value of formaldehyde and the state of such aqutic products.
