摘  要:试验研究了壳聚糖及其衍生物涂膜对鲜切刺嫩芽保鲜效果的影响。以新鲜刺嫩芽为原料,对其进行鲜切,再用1%壳聚糖及其衍生物、1%CMC和0.7%甘油的复合膜液浸涂,在4℃下冷藏,考察涂膜处理对鲜切刺嫩贮藏品质和生理生化变化的影响。研究表明,与对照相比,壳聚糖及其衍生物涂膜显著降低了鲜切刺嫩芽的失重率和MDA浓度,增加CAT活力,延缓了总酚和维生素C含量的减少,稳定了PPO活力的变化。其中,羧甲基壳聚糖的保鲜效果最好。The effect of chitosan and its derivatives coating on the preservation of fresh-cut Aralia elata Seem was investigated. Fresh Aralia elata Seem was selected. The Aralia elata Seem was fresh cut, then soaked in the compound fluid of 1% chitosan, 1% CMC and 0.7% glycerin and stored at 4 ℃. The effects of compound coating on preserved quality and physiological property of was studied. The results showed that the chitosan and its derivatives coating significantly decreased the lost weight and MDA concentration of fresh-cut Aralia elata Seem. And it increased the CAT activity. Additionally, total polyphenols content and VC content reduced were postponed, while PPO activity were maintained at a relatively stable level. Among all the coating treatment, the carboxymethyl chitosan provided best preservation result for fresh-cut Aralia elata Seem.
