摘 要:研究了花生蛋白在丁二酸二异辛酯磺酸钠(AOT)/异辛烷反胶束体系中分配特性,考察了缓冲溶液中盐的浓度、AOT浓度、缓冲溶液的p H、离子种类等条件对花生蛋白前萃率以及后萃的影响。结果表明,KCl浓度增加,前萃率降低,后萃两相分配系数由于"尺寸位阻效应"先增加然后降低;AOT浓度对后萃两相的分配系数影响不显著;缓冲液p H通过静电相互作用影响前萃率和后萃花生蛋白的溶解;不同的离子种类对花生蛋白的分配特性影响差异显著,阳离子的影响大于阴离子。This study evaluated the distribution characteristics of full–fat peanut protein in AOT/ isooctane reverse micelles.The effects of KCl concentration,AOT concentration,p H,ion species and other factors on the forward extraction and backward extraction were investigated.The results showed that the forward extraction rates decreased and the backward extraction rates increased firstly and then decreased because of size effect when increased the concentration of KCl. The variety of the concentration of AOT had no significant effect on the distribution coefficient of the two phase.The p H affected forward extraction rate and backward extraction through electrostatic interaction.The ion species had significant effects on the distribution characteristics of full–fat peanut protein and the effect of cation species was larger than anion species.
