摘 要:为筛选出适于喷雾干燥法制备高载量(50%)紫苏籽油微胶囊的壁材,本文以可溶性大豆多糖、阿拉伯胶、Capsule淀粉、纯胶2000、HI-CAP 100为壁材,研究了壁材种类及其浓度对紫苏籽油微胶囊特性的影响。结果表明,壁材浓度20%时,纯胶2000和HI-CAP 100作为壁材制备的微胶囊产品的表面油含量较低(分别为3.05%、3.31%),且包埋率较高(分别为93.86%、93.33%),包埋效果明显优于其他壁材。因此,纯胶2000和HI-CAP 100是制备高载量紫苏籽油微胶囊的优良壁材。Perilla seed oil was microencapsulated by spray drying with five different wall materials,including Soybean polysaccharide,Gum Arabic,Capsule,Purity Gum 2000 and HI-CAP 100. The effects of the type and concentration of wall materials on the properties of microcapsules were investigated,and then the potential wall material for preparing high-loaded(50%) microcapsules was screened out. Results indicated that with the wall material concentration of 20%,microcapsules prepared with Purity Gum 2000 and HI-CAP 100 showed lower surface oil content(3.05% and 3.31%,respectively) and higher encapsulation efficiency(93.86% and 93.33%,respectively). It could be concluded that Purity gum 2000 and HI-CAP 100 were the potential wall materials for the preparation of high-loaded microcapsules.
