摘　　要：橡木对葡萄酒的质量提升有重要作用,本文分析了国内外橡木资源,特别是欧洲的卢浮橡和夏橡、美洲白橡和国内的蒙古栎、辽东栎的资源分布状况。阐述了不同品种橡木的理化特性以及对葡萄酒质量提升的作用机理及橡木桶及橡木制品在葡萄酒酿造中的研究与应用现状。分析了橡木及橡木制品对葡萄酒酿造与葡萄酒风味及香气构成的影响,为全面了解国内外橡木资源与国产橡木在葡萄酒酿造中的应用研究提供参考依据。Oaks act an importance role in improving wine quality. This paper discussed the main oak species and distributed of the world, especially European oaks such as Quercus sesiliflora and Quercus robur L., American oak like Quercus alba L.and Chinese oak like Mongolia oak, East-Liaoning oak, reviewed different physicochemical property and the mechanism of improving wine quality, introduced current situation of research and application of oak barrel and productions for wine-making, elaborated the effect of oak barrel and productions on wine making and special flavor and the structure of aroma, hoping to provide reference for comprehending of oak barrel and productions research and application for wine-making.
