摘 要:通过使用氨基酸自动分析仪,对国内市场上的11种保健酒中的游离氨基酸进行了定性定量分析,研究结果显示,11种保健酒中共检测到25种氨基酸,包含6种人体必需氨基酸,另外,天冬酰胺、瓜氨酸、胱硫醚、β-丙氨酸、γ-氨基丁酸、鸟氨酸、1-甲基组氨酸、乙醇胺、磷酸丝氨酸、鹅肌肽等是首次在保健酒中检出,并对其进行了定量分析;11种保健酒的总游离氨基酸质量浓度范围在32.17~1799.14 mg/L之间,其中,宁夏红枸杞酒(1799.14 mg/L)和沱牌枸杞酒(1183.98 mg/L)的总游离氨基酸含量明显多于其他保健酒;通过聚类分析,宁夏红枸杞酒、沱牌枸杞酒与其他酒样可以明显区分开来。In this study, free amino acids in 11 kinds of healthcare wine in domestic market were determined quantitatively and qualitatively by using automatic amino acid analyzer. The results suggested that, 25 kinds of amino acids in total were detected in 11 kinds of healthcare wine including 6 necessary amino acids; In addition, asparagine, citrulline, cystathionine, 13-alanine, "γ-aminobutyric acid, omithine, 1-methyl histi- dine, ethanolamine, phosphoserine and anserine were detected and quantified for the first time in healthcare wine; total free amino acid concen- tration in 11 kinds of healthcare wine ranged between 32.17 mg/L and 1799.14 mg/L, among them, total free amino acid contents in Ningxia- hong wolfberry wine (1799.14 mg/L) and in Tuopai wolfberry wine (1183.98 mg/L) were significantly higher than other healthcare wine. Through cluster analysis, it was found that Tuopai wolfberry wine and Ningxiahong wolfberry wine could be clearly distinguished from other healthcare wine products.
