摘 要:对纤维素酶和半纤维素酶联合提取泡姜姜辣素的工艺进行研究。以泡姜粉为原料,50%乙醇作溶剂。选择香草醛作为标准对照品,通过紫外分光光度法,在280 nm处测定提取液中姜辣素的含量。通过单因素实验和正交优化设计实验,得到最佳提取条件:固液比2∶200(g∶m L),混合酶加量3 mg,酶解温度45℃,酶解时间2 h,泡姜姜辣素的提取率为1.69%。Cellulase and hemicellulase combined extraction of pickled ginger gingerol technology was researched with pickled ginger powder as raw materials, 50% ethanol as the solvent. Vanillin was selected as a standard control, on the basis of UV spectrophotometry, extraction of gingerol was determined in 280 nm. Through single factor experiments and orthogonal optimization experiment design, the optimum extraction conditions were obtained as follows: solid-liquid ratio of 2 : 200 (g : mL), mixed enzyme dosage of 3 rag, enzymatic hydrolysis temperature of 45℃, enzymolysis time 2 h, pickled ginger oleoresin extraction rate was 1.69%.
