摘 要:褪黑素是一种广泛存在的,对人体、动物和植物具有重要生理功能的小分子活性物质。许多食品中普遍含有一定量的天然褪黑素及其同分异构体,逐渐成为新的研究热点。本文从褪黑素及其同分异构体的发现与检测,在食品中的含量分布,褪黑素及同分异构体与微生物的相互作用3个方面进行综述,并对未来褪黑素及其同分异构体在食品研究中的发展趋势进行展望。Melatonin is a widely existed small active molecule in human, animal and plant with very important physiological functions. Melatonin and its isomers were found in many food styles with high level in the last several years, and it has become a new research hotspot recently. This review summarized the finding and detection methods of melatonin and its isomers, the concentration of melatonin and its isomers in different food styles and the interaction between melatonin and its isomers with microbes. Some tendencies of melatonin and its isomers in food research were presented anddiscussed, aiming to supply reference to the further research in this paper.
