摘  要:鱼油是ω-3多不饱和脂肪酸EPA和DHA的重要来源,EPA和DHA具有多种保健功能,而天然存在的鱼油中EPA和DHA含量较低,不能满足药品和保健的需求。试验以鱼油为原料,采用尿素包合法富集鱼油中的EPA和DHA,为制备高含量EPA和DHA的甘油三酯提供原料。在单因素试验的基础上进行了正交优化,得到最优尿素包合工艺条件:尿脂质量比3︰1,溶剂乙醇的添加量25 m L,包合温度-25℃,包合时间6 h,在此最优条件下获得的EPA和DHA含量为67.27%,比原料鱼油提高了43.15%。Fish oil is the important source of ω-3 polyunsaturated fatty acids EPA and DHA, which have various health care functions. While the content of EPA and DHA in natural fish oil is too low to meet the demand of medicine and health care. In this study, use fish oil as raw material to enrich EPA and DHA through urea adduction fractionation, to enrich raw material for the next step ester exchange. The orthogonal experiment is conducted on the basis of single factor experiment optimization, from which get the process parameters is as follows, ratio of urea and lipid is 3︰1, the volume of solvent ethanol is 25 mL, temperature is -25 ℃, time is 6 h. Under the optimal conditions, obtain the content of EPA and DHA is 67.27%, which is 43.15% higher than that of raw fish oil.
