摘  要:检测深圳市市售常见食品中钼含量并评估居民钼的膳食摄入量。于2015年在深圳市采集各类食品样品共340个,利用微波消解-电感耦合等离子体测定食品中钼含量。结合膳食调查数据计算居民钼膳食摄入量。结果表明,豆及豆制品、大米、小麦粉、坚果和杂粮类的钼含量相对较高。深圳市本地居民每日通过食物钼摄入量约为165 mg。大米及其制品是深圳居民钼摄入的主要来源,深圳居民每日钼的摄入量是适宜且安全的。Detect of molybdenum concentration in food and estimate of dietary molybdenum intake of inhabitant in Shenzhen. Totally 340 food samples available in Shenzhen were collected in 2015 and the concentration of molybdenum was detected by method microwave digestion and inductively coupled plasma-mass spectrometry determination. The dietary molybdenum intake of inhabitant in Shenzhen was estimated, combined with the date from the survey of the nutrition in the inhabitant. The results showed that molybdenum content in bean, rice, wheat flour, nut, coarse cereals and their products was higher than other food. Daily dietary molybdenum intake of inhabitant in Shenzhen was 165 mg. The major origin of dietary molybdenum intake was rice. The average daily dietary molybdenum intake was suitable and within the safe range.
