摘  要:目的了解广州市生食水产品副溶血性弧菌(Vibrio parahaemolyticus,VP)污染水平,为生食水产品VP监测工作提供依据。方法在全市12个区的餐饮单位、批发市场、肉菜市场、超市和零售店等场所分季节采集485份不同种类生食水产品样品开展VP检测。结果广州市2009年-2014年生食水产品VP总体检出率为11.55%(56/485)。淡水产品VP检出率高于海产品;甲壳类高于软体动物,最低的是鱼类。第3季度VP检出率最高(18.48%),其次为第2季度,最低的是第1季度、4季度。肉菜市场VP检出率最高,为28.57%;其次为餐饮单位、超市及批发市场;零售店检出率最低。结论广州市生食水产品存在不同程度的VP污染,检出率有明显的样品种类和季节差异,应加强整个产业链综合监管,夏秋季节开展VP食品安全风险预警。Objective To evaluate the contamination level of Vibrio parahaemolyticus( VP) in edible raw aquatic products in Guangzhou,so as to provide basis for the VP surveillance in edible raw aquatic products. Methods 485 samples of edible raw aquatic products were collected quarterly from caterings,wholesale markets,fishery markets,supermarkets and retail store for testing VP in the 12 districts of Guangzhou. Results The detection rate of VP was 11. 55%( 56 /485) in edible raw aquatic products in Guangzhou during 2009-2014. The detection rate of VP in fresh water products were significantly higher than marine products. The detection rate of VP in crustaceans was higher than that in mollusks,and the lowest rate was in fish. The detection rate of VP( 18. 48%) was the highest in the third quarter of a year,followed by the second quarter,and the lowest was in the first and the fourth quarter. VP had the highest detection rate( 28. 57%) in fishery markets,followed by caterings,supermarkets,and wholesale markets. And the lowest rate was in retail store. Conclusion There was VP contamination in edible raw aquatic products in Guangzhou. The detection rates were significantly different in different species or seasons. The government should integrate management throughout the food chain to prevent contamination and bacterial growth and carry out the early warning of VP food safety risk in summer and autumn.
