摘 要:窖泥质量的优劣直接影响着浓香型白酒的产质量及酒体风格,而长时间使用的窖泥因诸多因素会出现窖泥退化,故需要采取一定的措施进行窖池养护。将高温曲用于窖池养护,可使窖泥腐殖质含量提高0.63%以上,己酸菌数量增加3.39×105个/g以上,实验窖池所产原酒中己酸乙酯含量提高43.11 mg/100 m L以上,乙酸乙酯含量降低29 mg/100 m L以上,显示了高温曲用于窖池养护,在延缓窖泥老化及提高窖池所产原酒理化指标方面的有益作用。Pit mud quality will directly influence the quality, the style and the yield of Nongxiang Baijiu. Pit mud degradation will occur after long-term use. Accordingly, pit maintenance is necessary. The use of high-temperature starter in pit maintenance suggested that, humus content in pit mud increased by 0.63%, the number of caproate bacteria increased more than 3.39×105/g, ethyl caproate content in base liquor produced by the experimental pit increased by 43.11 mg/100 mL and ethyl acetate content dropped by 29 mg/100 mL. This method proved that high-tem-perature starter in pit maintenance had beneficial effects in delaying pit mud aging and improving the physiochemical indicators of base liquor.
