摘  要:基于仁怀大曲酱香型白酒基酒分型、分等的多样性,勾兑调味技术在酱香型白酒的香和味中扮演着不可估量的角色。分类等级在一级以下的白酒适合做大宗酒,用优级酒来定型,用特级酒和调味酒进行定格,巧妙掌握和运用酱香型白酒以酒勾酒的科学性。Based on the diversity of the types and quality grades of Daqu Jiangxiang base liquor, the blending & flavoring technology plays an important role in the aroma and the taste of Jiangxiang Baijiu. Liquor with its quality inferior to grade A is used as bulk liquor, liquor with its quality as excellent quality is used as mainbody liquor, and liquor with its quality as top quality is used as flavoring liquor. The appropriate use of liquor of different quality grade is important in practice.
