摘 要:目的:为有效利用带鱼鱼糜加工副产物,确定以其为原料制得的酶解物螯合钙的最佳螯合工艺。方法:在单因素试验基础上,采用Box-Behnken响应面分析法,探讨酶解物与氯化钙的螯合工艺条件。结果:优化的螯合工艺为:酶解物与氯化钙质量比6.4∶1,料液比1∶50 g/m L,温度30℃,时间21 min,pH 7.0,在此工艺条件下螯合率和螯合物得率分别为83.41%和13.49%,与预测值83.56%和13.61%吻合。结论:所确定的螯合工艺反应条件温和,反应速度快,酶解物与钙的螯合率和螯合物得率都较高,为钙螯合物的制备以及带鱼鱼糜加工副产物的高值化利用提供依据。In order to more efficient use of hairtail surimi processing by-products, investigation were carried out to optimize the preparation of hydrolysate chelating calcium from that. On the basis of results of the single factor experiment, the Box-Behnken central composite design and response surface method were adopted to explore the optimum chelating conditions of hydrolysate and calcium. The optimal chelate conditions were determined as: weight ratio of hydrolysate to calcium chloride 6.4∶1, ratio of solid to liquid 1∶50, temperature 30 ℃, time 21 min, pH 7.0. Under such conditions, chelate rate and yield could reach 83.41% and 13.49% respectively, which were well matched with predicted value of 83.56% and 13.61%. This optimal chelate conditions could obtain higher chelate rate and yield, which established a basis for the application of hydrolysate chelating calcium and more economic benefit of hairtail surimi processing enterprise.
