摘  要:对不同品种的粟谷全粉甲醇提取液的抗氧化活性及其中的抗氧化成分进行分析,并与全麦粉比较。选用5个代表性的粟谷品种,分析粟谷全粉甲醇提取液中的酚类物质、黄酮含量,采用高效液相色谱法分析其单体酚类的组成及含量,采用DPPH自由基清除能力、ABTS自由基清除能力和铁离子还原能力3种方法评价其体外抗氧化能力差异。不同品种粟谷及全麦粉甲醇提取液清除DPPH能力的变幅范围为12.2~20.7 mg TE/(100 g DW),清除ABTS+能力的变幅范围为85.4~136.6 mg TE/(100 g DW),FRAP的变幅范围为32.8~52.8 mg TE/(100 g DW)。酚类物质含量的变幅为11.1~25.8 mg GAE/(100 g DW),平均值为19.8 mg GAE/(100 g DW)。黄酮含量的变幅为3.8~7.5 mg CE/(100 g DW),平均值为5.4 mg CE/(100 g DW)。在6种全谷物中,均未检测到单宁(缩合单宁)。北冀谷中结合态酚含量在78%以上,郑麦7698结合态酚占74%。粟谷全粉中含有较丰富的酚类物质,具有较强的抗氧化活性,其抗氧化能力与酚类物质、黄酮含量之间存在正相关关系,且有显著的品种间差异,可作为一种潜在的天然抗氧化剂资源进行开发利用。The contents and compositions of phenolics and antioxidant activity of the methanol extract of different foxtail millet varieties and wheat were compared. The contents of phenolics and flavonoids of the methanol extract of five different varieties of foxtail millet and one kind of wheat were determined. High performance liquid chromatography(HPLC) method was used to measure the compositions and contents of phenolics in the methanol extracts. The antioxidant activity was analyzed using the DPPH radical scavenging activity, ABTS radical scavenging activity and ferric reducing ability of plasma(FRAP) assays. The DPPH radical scavenging activity of the methanol extracts ranged from 12.2to 20.7 mg Trolox equivalents/(100 g DW). The ABTS radical scavenging activity of the methanol extracts ranged from85.4 to 136.6 mg Trolox equivalents/(100 g DW). The FRAR activity of the methanol extracts ranged from 32.8 to 52.8mg Trolox equivalents/(100 g DW). The phenolic contents of the methanol extracts of 5 tested foxtail millet varieties ranged from 11.1 to 25.8 mg of gallic acid equivalents/(100 g DW). The flavonoids contents of the methanol extracts ranged from 3.8 to 7.5 mg of catechin equivalents/(100 g DW). Among the 6 tested samples, no tannin was detected.The content of the bond phenolic in foxtail millet(Beijigu) and wheat was over 78% and 74% respectively. Based on the research data, we can concluded that foxtail millet is rich in phenolics and possesses high antioxidant activity. Significant varietal differences were found. It is indicated that foxtail millet can be considered as a potential valuable source of the natural antioxidants.
