摘 要:从四川泡菜中分离筛选出一株产葡聚糖的菌株,命名为M81,鉴定结果为Leuconostoc mesenteroides(肠膜明串珠菌)。选取接种量、初始p H、培养温度为3个实验因素,葡聚糖产量为响应值,在单因素基础上采用响应面法设计实验,优化肠膜明串珠菌M81合成葡聚糖的培养条件。最优培养条件为:接种量4.0%,初始p H为8.0,培养温度为27.0℃,此时葡聚糖产量为60.55 g/L。A dextran-producing strain M81, was isolated from Sichuan pickle. The M81 strain was identified as Leuconostoc mesenteroides. Selected inoculation volume, initial pH and fermentation temperature for experiment factors, dextran production as the response value. Based on the single factor experiments, the response surface methodology was conducted to optimize the fermentation conditions for increasing production of dextran by the strain M81. The optimal conditions listed as follows: inoculation volume 4.0%, initial pH 8.0 and fermentation temperature 27 ℃. In this case, the dextran production was achieved at 60.55 g/L.
