摘  要:采用凯氏定氮法测定甘蔗中蛋白质含量,同时采用酸水解-全自动氨基酸分析仪法测定了甘蔗中氨基酸含量。研究发现:甘蔗中含有丰富的氨基酸,氨基酸的含量基本在0.1%~0.6%之间,且各氨基酸所占比例基本相近;甘蔗中蛋白质与氨基酸含量呈一定相关性,蛋白质基本是氨基酸含量的1.3~1.7倍。This paper use Kjeldahl nitrogen method to determine the protein content in sugar cane, and establish a method to determine the amino acid content in sugar cane by using acid hydrolysisautomatic amino acid analyzer. The study found that the amino acid content of Sugar cane is rich, which is basically between 0.1%-0.6%, and proportion of each amino acid is similar. The relationship between protein and amino acid content of sugar cane is according with positive correlation. The protein content is as much as 1.3-1.7 times than amino acid.
