摘　　要：留胚米所含有的丰富营养正在被越来越多的人所认知,其保鲜包装技术是生产中的关键问题之一。在分析了留胚米营养特性的基础上,对包装材料、包装形式、包装设备和保鲜原理进行了全面的阐述,建议留胚米的包装最好采用真空包装来隔绝氧气,减少微生物的滋生,以保证留胚米的食用品质。More and more people are aware of the nutrition of embryo rice. And the packaging preservation technology is one of the key steps in production. Based on the analysis of nutrition properties of embryo rice, we overviewed the packaging material, form,machine and preservation principle,and suggested using vacuum packaging or gas-filled packaging to isolate the oxygen and reduce the multiplication of microorganisms,in order to ensure the quality of the embryo rice.
